TASTING SHEET OF OSSIAN VERDLING DULCE
PREPARATION: this wine is made with grapes from old Verdejo vineyards prior to the phylloxera of the last years of the 19th century. The sandy soils stopped this plague and that was the reason why these vines did not suffer its terrible consequences. These plots are located in cool terrain, old river terraces at more than 900 meters of altitude.
An early harvest was carried out with the aim of reaching an optimum degree of maturation capable of maintaining the natural acidity of the grapes. After the cold chamber and rigorous discrimination, we proceed to destemming and pressing. The must ferments at a low temperature, stopping the fermentation by means of the cold to preserve its natural sweetness. After this, the wine is subjected to a settling to achieve the minimum possible turbidity.
GRAPE: 100% Verdejo
VIEW: Bright yellow with straw tones.
AROMA: Citrus notes of ripe fruit, mountain, mineral and floral.
TASTE: Tasty, highlighting its excellent acidity and elegance. It is fruity and easy to drink.
SERVICE: It is recommended that the wine be between 7 and 10ºC.
PAIRING: Perfect with oriental cuisine, especially Japanese, rice dishes, and salads with citrus notes.
