LOS VINOS DE CANADÁ

Canadá cuenta con dos provincias que sobresalen del resto en cuanto a la elaboración de vinos se refiere: Ontario, destacando la península del Niágara, y la Columbia Británica, con el Valle de Okanagan como una de las zonas más representativas.

TIPOS DE VINOS

En este apartado debemos hacer especial mención a los vinos de hielo. Son vinos elaborados a partir de uvas congeladas, que se vendimian normalmente a lo largo de la primera quincena de Enero y cuya idea es obtener un mosto lo más concentrado posible.

Además, las frías noches que allí se registran, consiguen mantener los niveles de acidez óptimos para equilibrar tan alto contenido de azúcares. Las uvas de los vinos de hielo, se recogen de noche, y en algunos casos, la primera prensada se hace in situ en el viñedo. Todo, para asegurarse de que la mayor parte posible de agua, se ha separado (por congelación) del resto de contenidos que realmente interesan: azúcares, acidos, etc.

En la vecina provincia de Québec comienza a despuntar un producto que los elaboradores están intentando que obtenga la denominación de origen calificada de: Vino de Hielo de Manzana de Québec, pero que por el momento se sigue embotellando con el nombre de “Sidra de Hielo”. Se elaboran con el mismo concepto que el icewine, pero con manzanas. Recogen casi en el mismo tiempo y el proceso es más o menos similar.
