Hakushu 12 Years Old is a Japanese single malt produced by the Suntory distillery, located 700 metres above sea level in the Southern Alps of Japan, on the foothills of Mount Kaikomagatake. The distillery is set in an untouched forest environment, fed by meltwater filtered through granite rock.
This is a whisky with a fresh, herbal character and a light touch of peat.
For its production, the barley malt is distilled twice in copper stills heated directly over fire. The water used comes from underground streams filtered through the mountain's granite rock. Maturation takes place over at least 12 years, combining different oak casks, including ex-bourbon casks, which contribute notes of vanilla and a light woody touch over a vegetal background.
